Raspberry Toasted Oat Treat
60g porridge oats
120g lower fat soft cheese
120g low-fat natural yoghurt
1 tbsp caster sugar
½ tsp vanilla extract
300g frozen raspberries thawed (fresh are even better)
Preheat the grill. Sprinkle the porridge oats onto a baking sheet and toast them lightly, turning once and
taking care that they don't burn. Cool.
Beat the soft cheese in a mixing bowl until smooth, then mix in the yoghurt, sugar and vanilla extract. Stir
in the cooled oats.
Put half the raspberries into the base of four serving glasses, reserving a few for decoration. Crush the
rest of the raspberries with a fork, then stir them through the soft cheese mixture to give a pretty swirled
effect. Spoon into the glasses and chill until ready to serve, decorated with the reserved raspberries.
Tip 1: To thaw frozen raspberries quickly, microwave them on HIGH for 40 seconds
Tip 2: You could use high fibre porridge oats to increase your intake of fibre.
