Country Fresh Soup

Serves 4 Costs 2.00 per recipe Costs 0.50 per serving Takes 30 mins to cook Takes  10 mins to prepare Vegetarian 1 5 a day portions


1 cup lentils (red), washed
2 pints vegetable stock
2 onions, diced
2 carrots, diced
1 stick celery, diced
2 large tomatoes, diced
1 large potato, diced
1 tablespoon medium oatmeal
Mixed chopped herbs


Place the diced vegetables, oatmeal, washed lentils and seasoning in a saucepan and add the vegetable stock.

Bring to the boil and then simmer for 30 minutes.

Liquidise if desired.

Garnish with chopped herbs.

Serve with slices of wholemeal bread and green salad for a satisfying meal.
