Wholemeal pancakes (sweet)
90g rolled oats
5 egg whites
2 large bananas
1 teaspoon ground cinnamon (optional)
poly or mono unsaturated oil for cooking (very small amount)
Combine all the ingredients in a blender, or a food processor.
Blend until a thick batter forms.
Depending on how thick you like your pancakes, an extra egg white or a touch of skimmed milk can be added.
Heat a very small amount of oil in a non stick frying pan over a medium heat. Ladle batter into the pan and fry pancakes until golden brown on each side.
