Vegetable Tartlets

Serves 8 Takes 20 mins to cook Takes  20 mins to prepare Vegetarian 1 5 a day portions


Wholemeal sliced loaf

2 eggs

2 tablespoons milk   

50gEdamcheese, grated

1 tomato, finely chopped

1 bunch of spring onion, finely chopped 

red pepper, finely chopped

mixed herbs


Pre-heat oven to 200°c/Gas Mark 6


Roll out the bread  and cut to size with pastry cutter and place into the bun tin.


Mix eggs and milk in a bowl, add grated cheese.


Chop spring onions, peppers and tomatoes and add to the egg mixture.


Season with herbs.


Spoon mixture into pastry cases.


Bake for 20 minutes until golden brown
