Spicy Mex Pancake Filling
1 medium onion
1 pepper (red, yellow or orange)
1 tbsp unsaturated oil
200g skinless, boneless chicken breast
1 tbsp tabasco sauce
Roughly chop the onion, pepper and chicken.
Fry the chicken in the oil for 5 minutes and then add the onion and pepper until they start to soften.
Add the tabasco to the pan and stir together until all of the ingredients are cooked through.
Serve with the pancakes.
This should fill 4 pancakes
