Salmon and Cream Cheese Pancake Filling

Ingredients

  • 100g flour
  • 1 pinch salt
  • 1 medium egg
  • 300ml skimmed milk
  • 1 spray low-fat cooking spray
  • 1 portion leek
  • 100g mushrooms, sliced 
  • 1 stock cube  
  • 20g butter
  • 40g flour
  • 300ml skimmed milk
  • 50g half-fat cheddar cheese, grated
  • 1tbsp parsley, or
  • 1tsp fresh chives

 200g low fat soft cream cheese

1 bunch of chives (finely chopped)

½ onion, grated

6 oz smoked salmon

Method

Chop the salmon and combine with the other ingredients

Add a spoonful to each pancake and serve.

 This mixture should fill 4 pancakes.
