Pasta or Rice Salad
200g cold cooked rice or pasta
1 can sweetcorn, drained
1 green pepper, de-seeded and finely chopped
1 red pepper, de-seeded and finely chopped
2 stalks celery, scrubbed and chopped
1 red skinned eating apple, cored and chopped
A handful of seedless grapes, halved
A handful of raisins
Pinch of salt
Freshly milled black pepper
2 tablespoons sunflower or olive oil
2 teaspoons lemon juice or cider or wine vinegar
Prepare dressing by mixing ingredients thoroughly in a bowl or place ingredients in a screw top jar and shake vigorously to mix.
Place all other ingredients in a large bowl.
