Pasta or Rice Salad

Serves 4 Costs 3.00 per recipe Costs 0.70 per serving Takes 20 mins to cook Takes  10 mins to prepare Vegetarian 1 5 a day portions

Ingredients

200g  cold cooked rice or pasta
1 can sweetcorn, drained
1 green pepper, de-seeded and finely chopped
1 red pepper, de-seeded and finely chopped
2 stalks celery, scrubbed and chopped
1 red skinned eating apple, cored and chopped
A handful of seedless grapes, halved
A handful of raisins

Dressing:
Pinch of salt
Freshly milled black pepper
2 tablespoons sunflower or olive oil
2 teaspoons lemon juice or cider or wine vinegar

Method

Prepare dressing by mixing ingredients thoroughly in a bowl or place ingredients in a screw top jar and shake vigorously to mix.

Place all other ingredients in a large bowl.

Pour over dressing and toss well together.
