Pasta & Salsa Salad

Serves 4 Costs 2.50 per recipe Costs 0.60 per serving Takes 20 mins to cook Takes  10 mins to prepare Vegetarian 1 5 a day portions

Ingredients

500g  cold cooked pasta
1 medium red onion - finely chopped
1 small yellow pepper - finely chopped
2 tomatoes - finely chopped
¼ cucumber - finely chopped
1 garlic clove - crushed
Juice of ½ lemon
½ tablespoon/10-15ml olive oil
1 tablespoon/25ml fresh chopped coriander

Method

Cook the pasta as per packet instructions and then mix with the oil to prevent sticking.

Combine all the other ingredients together and mix with the pasta.

Season and serve.
