Cous Cous Salad
200g instant cous cous
250ml boiling water
Juice of half a lemon
2 tomatoes, chopped
A chunk of cucumber, diced
1 spring onion, sliced finely
A quarter each of red and yellow peppers, chopped
Lots of chopped herbs: mint, parsley or coriander
Put the cous cous in a bowl and add the boiling water. Stir it around with the fork until it soaks up all the water – this will take a few minutes.
Add the lemon juice and fluff it up with the fork again.
Add the chopped vegetables and herbs and some black pepper.
Serve with grilled chicken or fish and a green salad for a healthy low fat lunch or dinnerCreate printer friendly PDF
