Cous Cous Salad

Serves 4 Takes 5 mins to cook Takes  15 mins to prepare Vegetarian 1 5 a day portions

Ingredients

200g instant cous cous

250ml boiling water

Juice of half a lemon

2 tomatoes, chopped

A chunk of cucumber, diced

1 spring onion, sliced finely

A quarter each of red and yellow peppers, chopped

Lots of chopped herbs: mint, parsley or coriander

Black pepper

 

Method

Put the cous cous in a bowl and add the boiling water.  Stir it around with the fork until it soaks up all the water – this will take a few minutes.

 

Add the lemon juice and fluff it up with the fork again.

 

Add the chopped vegetables and herbs and some black pepper.

 

Tips:

Serve with grilled chicken or fish and a green salad for a healthy low fat lunch or dinner
