Cous Cous & Grilled Sausages
500g extra lean sausages
125g cous cous
200ml boiling water
50g green beans
50g frozen peas
1 red or orange pepper
1 garlic clove
2 tablespoons of olive oil
Cook the sausages either under the grill or in the oven until cooked through.
Meanwhile, Put the cous cous, peas and sultanas into a large bowl. Pour over the boiling water and leave to soak for 5 minutes.
On the chopping board, cut the green beans and peppers into pieces.
Chop the tomatoes. Squeeze the juice from the orange. Crush the garlic.
Stir the vegetables, juice, garlic, oil and a little pepper into the cous cous and mix together well.
Spoon onto the plates and top with the sausages.Create printer friendly PDF
