Chilli Con Carne
225g lean minced beef
1 clove of garlic
1 teaspoon mild chilli powder
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground cinnamon
225g can red kidney beans
400g can chopped tomatoes
Peel and chop onion. Put onion and mince in a saucepan and dry fry for 5 minutes, stirring until mince is evenly browned.
Drain off the fat.
Grate the carrot and crush the garlic and add to mince with the spices. Cook for one minute
Add the drained rinsed beans, tomatoes and season as needed. Bring to the boil and stir.
Reduce heat and simmer for 45 minutes stirring occasionally.
Serve with rice or jacket potatoes and a green salad.Create printer friendly PDF
