Lemon Spaghetti with Tuna and Broccoli
Boil the spaghetti in water for 6 mins (or as per packet instructions).
Add the broccoli and boil for 4 mins more or until both are just tender.
Meanwhile, mix the shallots, olives, capers, tuna and lemon zest and juice in a big bowl.
Drain the pasta and broccoli, add to the bowl and toss really well with lots of black pepper.
Serve with a green salad for a lovely tasty and quick meal.
Alternatively, for a special occasion, use two salmon or tuna steaks rather than the tinned tuna - pan fry these whilst boiling the pasta and veg. Rather than mixing them into the bowl with the dressing ingredients, place them over the dressed pasta and serve.
