Cod Fillets - Pizza Style

Serves 4 Costs 6.00 per recipe Costs 1.50 per serving Takes 20 mins to cook Takes  10 mins to prepare

Ingredients

4 x 100g cod fillets
225g  canned chopped tomatoes
2 tablespoons tomato puree
50g pitted black olives, halved
2 tablespoons fresh basil, torn
25g freshly grated Parmesan
Freshly ground pepper

Method

Rinse the cod steaks and pat dry with absorbent kitchen paper. Line a roasting tin with non-stick baking parchment and lift the fish steaks into the tin. Preheat the oven to Gas Mark 5/190C/375F.

Mix together the chopped tomatoes, tomato purée, olives, basil and seasoning and spread equal amounts over each cod steak. Sprinkle over the Parmesan over the top and bake for 20 to 25 minutes, until the fish is cooked through and the cheese has melted.
