Banana Buns

Serves 10 Costs 1.50 per recipe Costs 0.10 per serving Takes 20 mins to cook Takes  10 mins to prepare Vegetarian


100g butter or marg
125g sugar
2 eggs
3 ripe bananas, mashed
100g  self raising flour
100g  wholemeal flour
1 teaspoon mixed spice
50g walnuts (optional)


Pre heat the oven to 180°c or gas 4.

Prepare a bun tin with some bun cases.

Cream the butter/marg and the sugar until light and fluffy.

Gradually add the beaten egg.

Stir in the mashed banana.

Sieve the flour and spice into the mixture and fold until incorporated.

Mix in nuts if using.

Fill bun cases.

Cook for 15-20 minutes until golden brown.

Cool on wire rack.
