Scrambled Egg Muffin

2 eggs

few sundried tomatoes

fresh basil, torn

1 english muffins


Crack and mix the eggs in a bowl (add pepper if needed)
Heat a non stick pan over a medium heat and pour in the eggs and cook til almost firm.
Add the chopped sundried tomato and torn fresh basil. 
Pile the egg mix onto a toasted English muffin.
