300g self raising flour
1 teaspoon baking powder
Pinch of salt
1 tsp sunflower oil
250ml semi skimmed milk
Flavouring of your choice 30g cheese, handful of sultanas or raisins, handful of fresh raspberries or blackberries, 1 apple finely grated, 1 teaspoon ground cinnamon or mixed spice.
Heat the oven to 220c/425f/Gas 7.
Sift flour, baking powder and salt together.
Break an egg into a jug. Add oil and mix well with a fork. Add milk to the measuring jug until the mixture reaches the 250ml level. Mix well.
Add the liquid ingredients to the flour and add your chosen flavouring and mix together with a wooden spoon.
Sprinkle a little flour on the worktop and flour your hands as well. Turn out the scone mix. Don't worry if the dough seems quite sticky, that's how it's meant to be.
Using either your hands or a rolling pin, smooth the dough out until it is about 1 inch thick.
Cut into rounds and place on a floured baking tray.
For a shiny finish, brush the scones with milk or beaten egg.
